Platanos Maduros or Amarillos are plaintains that have ripened to their yellow phase. The fruit inside is much sweeter than the green phase (when they are suitable for making tostones). Once sliced into small pieces they are fried in vegetable oil until browned and make a great side dish. Mirium Buhr shows us the complete preparation in the video.
